Chunky Peanut Butter Heaven Cookies

These cookies literally blew my mind.

Now, before you venture down to the bottom of this page and discover how many calories each cookie is, let me explain the ingredients that went into each one:

  1. Peanut butter.

Now although high in healthy fats and all natural (well, depending on the kind you use!), PB is generally pretty high in calories. Yes, the reduced fat reduces the fat content slightly, but it doesn’t decrease the calorie content significantly. So, check! These cookies are starting off on a healthy but high-calorie track!

  1. Pretzels.

You’ve gotta love pretzels. I mean, who doesn’t? They’re like the perfect crunchy, salty snack that actually doesn’t pack too much of a high-calorie or unhealthy punch! Not to mention, they pair great with PB, and are the perfect dipping-sticks.

  1. Hershey’s Kisses.

Although not the healthiest, the dark chocolate variety are at least slightly better. And when you…

Pumpkin Pie Baked Oatmeal

Now this looks good!

I’m extremely impatient.

I know, I know: “patience is a virtue”. Well, apparently I don’t have that virtue… Not even close. I can barely stand to wait the two minutes for my pancakes to cook, much less a whole 23 minutes for baked oatmeal. Holy healthy, that’s way too long for food, much less breakfast!

But let me tell you, after trying this oatmeal… even I admitted it was worth the wait.

This oatmeal is basically the perfect sweet treat to get you energized in the morning. It’s great for lazy mornings, when you don’t really feel like standing over a stove making scrambled eggs or even waiting in line at a smoothie shop. All you have to do is mix all the ingredients in a baking dish, pour it in a ramekin, and top it off with a bit of brown sugar and chopped pecans.

And oh my lord…

White (Belated) Christmas

Having recently braved the Boxing Day Sales (two days in a row… one day was just not enough) in an attempt to work off that Christmas Day turkey… and ham… and pasta, oh that pasta… I was pleasantly surprised by the amount of fantastic bargains that were on offer, particularly in Chapel Street, South Yarra. Having bought enough to dress a small army for the entire summer season, I am kind of jumping at any excuse to get myself into all this new summery gear, SO I thought it would be fun to showcase some of my new clothes each day this week, excluding New Years Day… for obvious vino-induced reasons…

Gingerbread with Orange Icing

You’ve gotta love gingerbread.

Especially gingerbread so yummy you pretty much can’t get enough. And in fact, you shouldn’t have to, because the gingerbread in question is actually healthy.

That’s right. Healthy. Bread. Healthy, guilt free, whole wheat… it’s all the same with this bread. Not to mention the decadent twist included…

When I was brainstorming ideas for my next recipe, I decided on making a Christmas-classic. Gingerbread! But instead of just any gingerbread, I knew I definitely wanted to kick it up a notch. So, what goes good with ginger? Well, for one… Orange! I know it may sound like an unlikely combo, but the sweetness of the orange balanced out by the spiciness of the ginger is completely decadent. And most definitely recipe-worthy.

So next came the question of consistency. Did I want this bread to be hearty, light and airy, or even dense like any good…

All Natural Granola Breakfast Bars

Christmas is practically upon us!

Every winter I find myself splurging on baked goodies, rolls, various desserts, and unhealthy breakfast foods more than ever. And although I try to go to the gym, between exam week** (see below), trying to fit all your shopping in, and even baking for friends, this isn’t always possible.

So as a result, I always find myself doing one of two things: either gaining a few pounds to keep me warm or balancing it all out with healthier treats.

This Christmas season I’ve tried to do the latter, although the various cookies, candy, and other treats I received at school last week haven’t exactly helped. Therefore, now that the big day is only 5 days away, I definitely need to watch what I’m eating.

Because I’m pretty sure gallons of icing and chocolate covered pretzels aren’t exactly healthy.

That’s exactly why I love these granola…

Quiet Thursdays: Eating Cupcakes

Isn’t that what you do after you photograph them?

I’ve been out all day, going to new places and taking photos.  Both places I went to were fantastic and I am looking forward to looking at the photos, hopefully I got some good ones.

The other day I tried some new things with the macro lens.  Something that I might try doing more of, and I have to admit, I really enjoyed doing it.  So today, I thought I might share with you some of the photos I was taking.  I tried photographing some jewellery that I had, see how I would go photographing it.  Then I saw a website for cupcakes and thought how bad the photos were for the wonderful cakes they were making, and thought I could do better, so I got my daughter to get me some cupcakes for me to photograph.

Here is a gallery…
